Deep, Complex Flavors from Ancient Woodlands
A honeydew honey collected from the secretions of aphids and scale insects on forest trees — primarily oak, pine, and fir. Darker, richer, and higher in minerals than floral honeys.
Forest honey (also called honeydew honey) is produced when bees collect the sweet secretions of aphids and scale insects feeding on forest trees — primarily oak, pine, and fir. Unlike floral honeys, it contains no pollen, giving it a distinctive dark colour, malty flavour, and exceptionally high mineral content. Our forest honey is sourced from the ancient forests of Turkey and Eastern Europe, where pristine woodland environments ensure exceptional quality. It is particularly prized in Germany, Austria, and Switzerland, where it commands premium prices in specialty food stores.
