Forest honey (also called honeydew honey) is produced when bees collect the sweet secretions of aphids and scale insects feeding on forest trees — primarily oak, pine, and fir. Unlike floral honeys, it contains no pollen, giving it a distinctive dark colour, malty flavour, and exceptionally high mineral content. Our forest honey is sourced from the ancient forests of Turkey and Eastern Europe, where pristine woodland environments ensure exceptional quality.
